Rhubarb and Slingshot Gin Jam

There’s something rather special about this jam. We’ve taken the sharp, rosy tang of Irish rhubarb and given it a proper lift with a generous splash of Slingshot Gin from Lough Ree Distillery in Lanesborough, Co. Longford. The result is a bright, citrusy preserve with a gentle botanical backbone that makes ordinary toast feel like a small occasion.

Three lovely ways to enjoy it beyond the usual morning spread:

• Spoon a spoonful over soft goat’s cheese or a ripe Brie on a cheeseboard — the citrus and gin cut through the richness beautifully.

• Warm a little and brush it over roast pork or chicken in the last ten minutes of cooking for a sticky, fragrant glaze.

• Swirl it through thick Greek yogurt or vanilla ice cream, or fold a spoonful into a simple sponge cake batter for a grown-up twist on a classic tea-time treat.

One jar never seems to last long once people start finding excuses to open it.
